My olives are now on to the next step…soaking in a brine of vinegar and salt for about 2 months. Whoever figured out how to make olives edible through this process however many thousands of years ago was either a mad genius or damn lucky. I can see fire. You see stuff burn with lightning. But who thought that if you soak olives in vinegar and salt for 2 months you’d get something that goes from totally inedible to really tasty? Insane! I picked another bucket full last week when the moon was waning, as is local lore. Yummy olives all winter, I hope! #spain #olives
